Vegan Chocolate Cupcakes

I wanted cupcakes but didn’t have eggs or milk, so I turned to the internet and found a Vegan recipe (don’t judge).  I was extremely skeptical and really didn’t know what to expect.  I also needed to find a recipe that didn’t use all the weird flours that I didn’t have (i.e. brown rice flour, sorghum flour or xanthan gum).

I found this recipe from Post Punk Kitchen and decided I wanted cup cakes instead of a cake – I find that I over eat with cake.  I figured out an 8″ Spring Form Pan yields about 16 “normal” cupcakes.  Like with most baking I do I had lots of help!
