Booga is a very picky eater so trying to find anything he likes that involves meat or chicken is extremely difficult. The only meat I know he likes is chicken nuggets (which honestly is really gross). Since we eat out once a year I needed to find an acceptable substitute.
I decided to search Pinterest and Google for a healthy alternative. This recipe is merger between two recipes I found (Sweet Chicky Nuggets from My Name is Snickerdoodle and Baked Chicken Nuggets from Itsy Bitsy Foodies
Ingredients:
2 very large chicken breast
1/2 cup of milk
1/2 cup of pickle juice (Dill or Kosher)
1 egg
2TBSP powder sugar
1 1/4 cups of flour
1 tsp of salt (we used two but with the pickle juice it was a tad salty)
1 tsp pepper
Cut chicken into 1/2″ to 1″ cubes. Mix milk, egg and pickle juice together in a medium size bowl. Add chicken to bowl, cover with plastic wrap and put into fridge for 1 – 4 hours. Combine flour, sugar, salt and pepper in a gallon size Ziploc Bag. Remove chicken from egg mixture using tongs or a fork, add to flour mixture. Shake the chicken in the bag until each piece is covered. Pre-heat oven to 400 degrees. Take a pan rub the pan with oil (coconut, olive or canola oil). Remove chicken from bag with tongs and place on the pan. Place pan in oven cook for 7-10 minutes and flip the chicken over and cook for another 7-10 minutes. Remove chicken nuggets and serve with your favorite dipping sauce.
