Yay one month no microwave! Jeff still uses it but he is digging the cast iron pan for cooking stuff. This week I made a No-Bake Peanut Butter Pie from Chocolate Covered Katie. It was AMAZING! Honestly I didn’t want to share but I did with the Princess and Jeff. Why no Booga, you ask? My Booga has a peanut allergy it is not severe but he gets puffy and breaks out. Since I did not think it was fair to have pie that he couldn’t eat I made him “pie”.
Booga’s No Bake Nana Pie (2 single servings)
- 2 graham cracker (you want it square so you can break a rectangle in half)
- 1 Cup Plain Yogurt
- 1 TBSP Maple Syrup
- 1 Very Ripe Banana
- 1TBSP Coconut Oil
- 2 Ramequins
Place the graham crackers in the ramequins. Blend the yogurt, maple syrup, coconut oil and banana together (you can mash with a fork or in a blender). Pour mixture over the graham crackers. Freeze for 30 minutes and serve. If you freeze the “pie” you will need to soften it before serving (room temperature will do.)
