Tasty Tuesday – Spaghetti Squash

I admit I have fallen off the exercise wagon and feel like crap because of it.  Yesterday I decided I needed to do something I have NEVER done before I went for a run.  I put on the exercise shorts, te iPod and ran/walk to Eminem.  I probably looked like a fool because no one looks good running but I did it, it felt really good.  Besides starting to exercise again I wanted to stop eating some of the stuff we have had in the house (cookies, cake, Halloween Candy, ice cream).  I have officially sworn off ice cream for good, I will miss two of my favorite men (Ben and Jerry) but I can not handle ice cream any more.  I have also looked at going gluten free I love my bread but bread has not returned the favor.  I am thinking maybe in the new year I will give it a whirl.  I love pasta and the last time we were at the Farmer’s Market we got a spaghetti squash.  The Princess thought that was the funniest name for a squash ever.

Sunday we cooked it up and I forgot how incredibly easy they are to cook yummy the are.

Preheat oven to 375.  Wash the squash.  Take knife slice lengthwise (lengthwise will have longer “noodles”) scoop out the seeds.  Place rind side up on a baking sheet.  Bake for 30-40 minutes.  Scoop the squash into a serving dish.  Serve with spaghetti sauce.
