We (the kids and I) made Halloween Shortbread Cookies on Sunday. I really wanted cookies so I pulled out my (very old) Betty Crocker cookbook (1960 – it was my grandma’s cookbook that she gave to me when I went to college). This makes about 2 dozen cookies.

3/4 cup butter (softened)
1/4 cup sugar
2 cup all purpose flour
Preheat oven to 350. Mix all ingredients together and roll out on a floured cloth on a board. Roll out to about 1/2″ thickness and and use cookie cutters (we used Halloween ones). Bake for 20 minutes on an ungreased cookie sheet. Remove from pan immediately and place on cooling racks.

Takes about an hour from start to finish (clean-up) and they are FANTASTIC! It is a great way to spend a Sunday afternoon!
