Since Thanksgiving is next week I decided to post some of my main stays early so other can enjoy them (and go shopping before Wednesday night). Some things I guess I never thought of for Thanksgiving until I moved to the South, Mac & Cheese at Thanksgiving is one of them. This recipe comes from Mrs. Wilkes Cookbook (one of my favorites) I make it all the time and especially for Thanksgiving, it is always a HUGE hit!
Mac & Cheese:
2 cups elbow mac
4 eggs beaten
1 stick of unsalted butter
2-3 cups of grated cheese (I used 1 16oz block of cheese – the more cheese the better 🙂 )
bread crumbs
Parmesan cheese (just a couple of shakes)
1 tsp. Salt
Cook elbow mac as directed in salty water. Beat eggs add Parmesan cheese. Grate cheese. Drain noodles put noodles back in pan add butter, cheese (save some for the top), and egg mixture. Put noodle in baking dish (I used a 9×13 Pyrex) top with bread crumbs and cheese. Bake for 30 minutes at 350.
The original recipe is from Mrs. Wilkes Cookbook. I have modified it several times over the years. I have added broccoli and other veggies (frozen and fresh) to the mac & cheese and baked it the same amount of time. This is a great base recipe, it would be great with some really good cheese and Wacky Mac too!
Another tip if you grate cheese, grate extra and place it in a Freezer Bag and it can be frozen up to 2 months!
You need 3 cups of milk.
