2 Green Onions Thinly sliced – I minced
1/4 tsp Garlic Powder
1 TBSP Olive Oil
1 (15 oz) can of Black Beans Rinsed and Drained – I use two cups of cooked beans
1 Cup Salso
1 1/2 tsp Chili Powder
2 Cup Shreeded Cheddar Cheese
6 10″ Flour Tortillas
1/2 Cup Sour Cream (for garnish)
1/4 Cup Sliced Black Olives *Garnish
1/4 Cup Chopped Fresh Cilantro *Garnish
Cook onions in oil for 2 minutes. Add beans, garlic, 1/4 cup of salsa and chili powder. Heat. Remove from stove stir in 1 cup of cheese.
Spread about one cup of the mixture down the center of each tortilla. Roll up and place in a greased 11″x7″ baking dish.
Spoon remaining salsa and cheese over tops. Microwave for 4 minutes on HIGH.
