Homemade Wheat Thin Crackers

I love snack foods crackers, chips I am an equal opportunity consumer of snack foods.  I really wanted some Wheat Thins last week so I decided to pull out my recipe and make a batch.  Besides the fact Booga tried eating the dough they turned out very well (I have made them in the past) and I think my kids are going to want them again very soon.

1 3/4 cup Whole Wheat Flour
1 1/2 tsp Sugar
1/2 tsp Salt 1/4 tsp Vanilla
1/4 tsp Paprika
4 TBSP Butter (1/2 stick)
1/4 cup of water (I need to add a little more to form my dough – I recommend adding 1/4 cup then adding a little at a time)
Additional Salt for Topping (I did not do this)

Dough:  Combine flour, sugar, salt and paprika in a medium bowl.  Cut the butter into small pieces using a pastry blender.  Combine water and vanilla and add to flour mixture, mixing until smooth.

Preheat oven to 400 – line baking sheet with parchment paper or lightly grease (I use parchment paper).

Roll and cut dough – Divide dough into four pieces; keep other pieces covered while working.  Lightly flour work area flip dough to keep from tearing.  Trim dough with knife ot pizza cutter.  Transfer squares to baking sheets.  You can crowd together they don’t expand. 

Bake:  Bake crackers one sheet at a time until crisp and brown 5-7 minutes.  Thinner crackers take less time.  Remove crackers from oven, cool.  Store in air tight containers.
