Han Solo in Carbonite Cake

Last weekend I made an egg-free yellow cake for one of my friends for his birthday.  I of course don’t make “normal” cakes I make “cool” cakes as my daughter says.  I decided to make my first cake in three years (it really has been that long) and make it of course epic.  There were several changes this time around the first being I did not use Crisco, I used a 1/4 cup of coconut oil instead and the constancy of the the fondant was 10x’s better than it ever was with Crisco.  I also cheated and had my Kitchen-aid mix the colored fondant (let me just say these hands are not what they use to be).

The Egg-Free Yellow Cake recipe can be found here, I did because their son has an extreme egg allergy and it would really stink not being able to eat cake because it had eggs.  The cake was AMAZING it was moist and honestly no one believed me that it did not contain eggs.
