Since I am pretty sure Santa is Gluten-Free I decided to make him some Gluten-Free Peanut Butter Cookies. These extremely easy cookies are FANTASTIC! I am a peanut butter cookie snob and this recipe makes extremely moist peanut butter cookies (my favorite – I hate hard peanut butter cookies). These do contain peanuts so Booga can’t eat them but I am sure if I made them with a nut butter they would be good too.
- 1 Cup of Peanut Butter (I used generic creamy)
- 1 cup of sugar (I don’t cook with anything but sugar)
- 1 tsp vanilla
- 1 egg
Pre heat oven to 325. Mix everything together in a bowl. Roll into 1″ balls, place about 2″ apart and criss-cross with a fork. Bake for 8-10 minutes. Cool on pan for 5 minutes, transfer to cooling rack. Serve.
